Omelette Soufflee
Ingredients
Directions
The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.
Prepare the eggs
Separate the egg whites and yolks into two bowls.
Beat the yolks well, then add a little sugar and salt.
Beat the egg whites until stiff peaks form.
Gently fold the beaten egg whites into the yolk mixture.
Cook and bake
Melt a lump of butter in a pan over medium heat.
Pour the omelette mixture into the pan.
When the omelette is firm enough, turn it onto a serving dish.
Bake in a preheated oven at 400°F (200°C) until well risen.
Serve
Serve immediately to prevent it from deflating.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Eggs
- Whites trap air for lift, and yolks add richness and set the structure of the omelette.
- Butter
- Adds fat and flavour and helps the base brown in the pan.
The step that matters
Folding the whites into the yolks. Folding gently keeps the air beaten into the egg whites. Stirring or deflating them loses that air, so the omelette rises less in the oven.
Swap the lemon
How well each one fits the dish's main ingredients (egg, sugar, butter):

- Lemonthe original
- Raisinfits about as well
- Figfits about as well
Fit is the average pairing score against egg, sugar, butter. Candidates are from the same food group and used in at least 100 recipes.
