Cucumber Salads

Ingredients

Directions

  1. Prepare the cucumbers and cut them into long, thin slices.

  2. Use a small knife to cut each piece into thin threads, then wind them into a skein that fits the dish.

  3. Cover the cucumbers with vinegar and let them sit for at least 1 hour.

  4. For sensitive stomachs, soak them in water first, then in vinegar, and wring them in a cloth.

  5. Arrange the cucumbers nicely in a round or oval dish, pour oil over them, and sprinkle with fine pepper and coarse sea salt.

  6. If vinegar is not tolerated, substitute with a little powdered mint.
