Pigeon Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Prepare the pigeons by cleaning and seasoning them with salt and pepper.

  3. In a pan, melt butter and sauté chopped onions until golden.

  4. Add the beef steak, cut into pieces, and cook until browned.

Assemble and bake

  1. Combine the pigeons and beef mixture, then place in a pie dish.

  2. Cover with pastry, seal the edges, and make a few slits on top.

  3. Bake in the oven for about 45 minutes or until the pastry is golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pigeons
Provide the main meat, which becomes tender and rich during the long baking.
Beef steak
Adds savoury, browned meat flavour and body to the filling.
Onion
Sweetens and deepens the flavour of the filling as it turns golden in butter.
Butter
Carries fat for sautéing the onions and adds richness and browning.
Pastry for pie
Encloses the filling and browns in the oven, forming the crust.

The step that matters

Browning the beef and onions. Searing the beef and cooking the onions until golden builds browned, savoury flavour through the Maillard reaction. Pale, undercooked meat and onions will taste flat once baked inside the pie.

Swap the onion

How well each one fits the dish's main ingredients (beef, pepper, butter):

  1. Potatofits about as well
  2. Onionthe original
  3. Capsicumfits about as well
  4. Tomatofits about as well

Fit is the average pairing score against beef, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
