Fish and Sauce of Whitings, Haddocks, or Flat Fish [Scotch]

Ingredients

Directions

  1. Make a sauce with the fish heads and fins, adding pepper, salt, onions, chives, and parsley.

  2. Strain the sauce and let it cool.

  3. If the fish are large, cut them into chunks and roll them in flour.

  4. Add the fish to the sauce, sprinkle with a little flour, and add pieces of butter and sprigs of parsley.

  5. Cover the pan tightly and shake gently while cooking for 5 to 15 minutes, depending on the thickness of the fish.

  6. Serve the fish with plenty of sauce, ensuring it is not thicker than soup.
