Why it works: Almond and flour are a kitchen classic. They rank in the top 5% of all ingredient pairs, and cooks put them together in 8,673 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓
Almond Soup
Ingredients
Directions
Prepare the veal
Cook the knuckle of veal in a pot until tender, then remove the meat and return the bones to the pot.
Let the meat cool, then pound it.
Make the almond mixture
Prepare the almonds and mix them with the veal and panada in a mortar.
Add 2 teaspoons of rice flour and rub the mixture through a sieve with a little cream.
Finish the soup
Gradually mix this into the soup and let it simmer without boiling until thickened.
Season the soup before adding the cream, as it will lower the seasoning.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Almonds
- Provide the main body and nutty flavour of the soup.
- Rice flour
- Thickens the soup so it becomes smooth and creamy when simmered.
- Rich cream
- Adds richness and a smooth, velvety texture at the end.
- Veal knuckle
- Builds a savoury, gelatin-rich base for the soup.
The step that matters
Let the soup simmer without boiling. Boiling after the thickener is added can make the soup grainy or cause it to separate, so it should only simmer gently until thickened.
Swap the almond
How well each one fits the dish's main ingredients (veal, cream, rice, flour, ham):
- Almondthe original
- Pistachiofits about as well
- Chestnutfits about as well
