What each ingredient does

Eggs
Egg yolks thicken the soup and give it a smooth, rich body when stirred in off the heat.
Cream
Adds richness and a softer, silkier texture to the soup.
Eels
Provide the main flavour and body of the soup once simmered and pounded.

The step that matters

Mix without boiling. Once egg yolks are added, boiling can curdle them and make the soup grainy. Keeping it below a boil lets the yolks thicken it smoothly.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (mushroom, mace, pepper, lemon, egg):

  1. Capsicumfits better
  2. Shallotfits better
  3. Spinachfits better
  4. Onionthe original

Fit is the average pairing score against mushroom, mace, pepper, lemon, egg. Candidates are from the same food group and used in at least 100 recipes.
