Why it works: Garlic and onion match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 29,058 recipes. Both carry furaneol, which smells caramel, strawberry. The science ↓
To Boil a Leg of Mutton
Ingredients
Directions
Prepare
Soak the leg of mutton in a mixture of tepid milk and water for several hours.
Wash the leg well and place it in fresh tepid milk and water with a little rice flour and minced mutton suet.
Cook
Bring the mixture to a quick simmer and skim off any foam.
Cook for 30 minutes per pound, skimming as needed.
Add garlic, sweet herbs, onions, and parsley if desired.
If no optional ingredients are added, continue cooking in milk and water alone.
Serve
Serve with caper sauce over mashed turnips, endive, spinach, or sorrel.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Mutton leg
- Provides the main meat, which becomes tender through long, gentle simmering.
- Milk
- Softens the meat and gives the cooking liquid a mild, rich flavour.
- Rice flour
- Thickens the cooking liquid slightly, giving it body.
- Minced mutton suet
- Adds fat, contributing moisture and richness to the meat and broth.
The step that matters
Skimming the foam. Rapid simmering or boiling releases foam made of proteins and impurities. Skimming it keeps the broth clear and the flavour clean.
Swap the garlic
The recipe marks garlic as optional. How well each one fits the dish's main ingredients (mutton, milk, rice, flour, onion, parsley, sauce):
- Capersfits better
- Turmericfits about as well
- Cuminfits about as well
- Garlicthe original
Fit is the average pairing score against mutton, milk, rice, flour, onion, parsley, sauce. Candidates are from the same food group and used in at least 100 recipes.
