Sweet Siveetbrend Pasty

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Line a dish with pasty dough.

  3. Fill with veal or vegetable filling, seasoned sweet.

  4. Add beaten collops rolled in white spices.

  5. If not very fat, place a thin slice of bacon over each collop.

  6. Cover with a slice of veal or lamb's sweetbread.

  7. Layer more veal, then add artichoke bottoms and hard-boiled eggs.

  8. Top with minced apples, sugar, and plumped currants.

  9. Finish with minced marrow or fresh butter.
