Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chestnuts
Provide the main bulk and a sweet, starchy, nutty flavour.
Eggs
Set the custard as they cook, giving the pudding its structure.
Cream
Adds richness and a smooth, tender texture to the pudding.
Almond paste
Adds sweetness and a subtle almond flavour.
Egg whites
Whipped into the mixture to lighten it and add airiness as it bakes.

The step that matters

Pour into a greased dish and bake until set.. Eggs set as their proteins coagulate with heat. Baking just until set keeps the custard tender and smooth; overbaking makes it firm, grainy, or watery.

Swap the orange
