What each ingredient does

Tongue
Forms the main body of the paste, giving it its rich, meaty texture.
Butter
Adds fat and richness, and the clarified butter topping seals the surface.
Cooked beef or mutton
Adds more meaty flavour and helps bind the pounded mixture together.
