What each ingredient does

Chicken
Provides the main protein and body of the dish, cooking through in the oven.
Butter
Adds fat that carries flavour and helps the chicken brown and stay moist while roasting.

The step that matters

Basting frequently during roasting. Spooning fat over the chicken keeps the surface moist and helps it brown evenly. Without it, the exposed areas can dry out before the thickest parts are cooked through.
