General Directions for Brewing Ak, Beer, Sfc.

Ingredients

Directions

Prepare the mash

  1. Clean and sweeten all brewing vessels.

  2. Add a portion of hot water to the mash tub, then add the remaining water.

  3. Stir the malt into the water and sprinkle a coating of malt on top.

  4. Cover and let it stand for two or more hours.

  5. If the first drawing off is thick, pour it back until it runs clear.

  6. Keep adding fresh water to the mash until the necessary quantity is gained.

  7. Use a mixture of different malts for the best beer.

  8. Wait two to three days after grinding the malt before brewing.

Boil and ferment

  1. Add hops to steep in the first drawing off.

  2. Boil the mixture for half an hour to extract the bitter from the hops.

  3. Cool all the liquor as soon as possible.

  4. Cool a portion of the boiled wort and add barm to accelerate fermentation.

What each ingredient does

Malt
Provides the fermentable sugars that the yeast later turns into alcohol.
Hops
Adds bitterness that is extracted during boiling and balances the sweetness of the malt.
Soft water
Forms the liquid base in which the malt is mashed and sugars are dissolved.

The step that matters

Cool the liquor quickly. Wort left warm for long periods can sour or pick up unwanted bacteria before yeast is added. Cooling it promptly lets the barm start fermentation cleanly.
