Why it works: Carrot and pepper match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 14,555 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Young red carrots
Form the main vegetable body of the dish, which the glaze coats.
Butter
Adds fat and richness, helping the glaze coat the carrots and carry flavour.
Castor sugar
Adds sweetness and helps the carrots brown and glaze as liquid reduces.
Meat gravy
Supplies savoury flavour and liquid that reduces into a glaze around the carrots.

The step that matters

Boil rapidly to reduce the gravy. If the gravy is not reduced enough, the carrots stay watery and the glaze stays thin. Rapid boiling evaporates water and concentrates the sugars and gravy, so the glaze thickens and clings to the carrots. Stop before it scorches, since sugar darkens quickly.

Swap the carrot

How well each one fits the dish's main ingredients (butter, sugar, pepper, meat):

  1. Capsicumfits better
  2. Mustardfits better
  3. Potatofits better
  4. Carrotthe original

Fit is the average pairing score against butter, sugar, pepper, meat. Candidates are from the same food group and used in at least 100 recipes.
