Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Shape and bake the cases

  1. Prepare puff pastry.

  2. Roll the puff pastry out to ½ inch thickness.

  3. Cut the pastry into rounds.

  4. Place the pastry rounds on a wet baking sheet.

  5. Brush the tops with beaten egg.

  6. Mark the centers with a smaller cutter.

  7. Bake in a hot oven at 400°F (200°C) for 20 to 25 minutes until well risen and firm.

Hollow the cases

  1. Remove the lids and scoop out any soft pastry inside.

  2. Dry the pastry in the oven.

Make the filling and serve

  1. Combine the chicken, ham, mushrooms, thick white sauce, and seasonings in a pan.

  2. Heat the mixture thoroughly.

  3. Stir in the cream.

  4. Fill the patty cases with the mixture.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Patty cases
Puff pastry rises and crisps in the oven, forming a shell that holds the filling.
Chicken
Provides the main protein and body of the filling.
Thick white sauce
Binds the filling together and keeps it moist and creamy.
Mushrooms
Add moisture and an earthy flavor to the filling.
Ham
Adds salty, savory flavor that seasons the filling.
Cream
Adds richness and a smoother texture to the finished filling.

The step that matters

Dry the pastry in the oven.. Moisture trapped inside the hollowed pastry turns it soft and soggy once filled. Drying the shells lets steam escape so they stay crisp.
