Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fowl
Forms the outer wrapper that is boned, rolled around the filling and cooked whole.
Sausage meat
Adds a moist, seasoned layer that surrounds the filling and keeps the roll juicy.
Eggs
Hard-boiled slices set into the filling to give a visible, firm pattern when cut.
Ham or tongue
Adds savory, meaty strips that contrast in color and flavor with the sausage meat.

The step that matters

Roll up tightly and tie in a cloth. A tight roll with even filling keeps the slices neat and holds the layers together. Loose wrapping lets air and fat separate the layers, and the cloth keeps the shape during cooking and pressing.

Swap the nuts

How well each one fits the dish's main ingredients (meat, pistachio, truffle, ham, egg, almond, pepper):

  1. Chestnutfits better
  2. Walnutfits better
  3. Beansfits about as well
  4. Nutsthe original

Fit is the average pairing score against meat, pistachio, truffle, ham, egg, almond, pepper. Candidates are from the same food group and used in at least 100 recipes.
