Sugar Browning

Ingredients

Directions

  1. In a clean frying pan, combine the sugar and butter over a very low fire.

  2. Beat with a wooden spatula until completely dissolved.

  3. When the mixture boils rapidly, raise it slightly from the fire, then return it, repeating until it turns a rich brown color.

  4. Pour into saucers or small pots for use, or store in a wide-mouthed bottle, corked and sealed.

What each ingredient does

Refined sugar
Dissolves into the butter and caramelizes, providing the sweetness and brown color of the finished mixture.
Butter
Melts with the sugar to form a smooth, fluid base that carries the sugar as it cooks.

The step that matters

Repeating the lift off the fire while the mixture boils. Sugar can scorch quickly once it darkens, so pulling the pan off the heat between boils lets it brown evenly without burning or turning bitter.
