Ingredients

Directions

Prepare the beef

  1. Sprinkle the beef slices with pepper and fry in butter until light brown, being careful not to overcook.

Cook the cabbage

  1. Drain and chop the boiled cabbage or coleworts, then sprinkle with pepper and salt.

  2. Add the chopped cabbage to the frying pan after removing the beef, shaking it over the heat until heated through.

Serve

  1. Place the cabbage in the center of a dish and arrange the beef slices around it.

  2. If desired, warm the cold gravy in the pan and serve it in the dish or in a separate boat.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cold salt beef
Provides the main meat flavour and is browned in butter for a savoury crust.
Boiled cabbage or coleworts
Forms the bulk of the dish and soaks up butter and seasoning as it heats.
Butter
Fries the beef and cabbage, adding richness and browning the surface.

The step that matters

Frying the beef. Cold beef cooks quickly, and overcooking dries out its fibres and makes it tough. Stop once the slices are light brown.

Swap the cabbage

How well each one fits the dish's main ingredients (beef, pepper, butter):

  1. Potatofits better
  2. Onionfits better
  3. Capsicumfits better
  4. Cabbagethe original

Fit is the average pairing score against beef, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
