Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 350°F (175°C).

  2. Season the meat with salt, pepper, and nutmeg.

  3. Scald the sweetbreads, then slice or chop them.

  4. Layer the sweetbreads, oysters, egg, and force-meat balls among the meat.

  5. Add ½ cup of good gravy and ⅓ cup of white wine.

  6. Optionally, lay thin slices of ham on top.

  7. Bake until the crust rises without scorching.

  8. Once baked, add ½ cup of good gravy thickened with cream and flour on top.

  9. Decorate the top with leaves or stars.
