Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Heavy cream
Whipped into a firm froth that forms the light, rich topping.
Lemon juice
Adds acidity that sharpens flavour and thickens the cream as it stands.
Rum
Adds aroma and flavour to the spirit base.
Brandy
Adds aroma and warmth to the spirit base.

The step that matters

Warm the cream to blood warm before adding it. Cream that is too hot can curdle or thin when it meets the acidic, alcoholic base, while cream that is too cold mixes unevenly. Gentle warmth helps it blend smoothly and whip into a stable froth.
