What each ingredient does

Egg yolks
Thicken the sauce as it heats and help bind the butter into a smooth emulsion.
Butter
Provides fat and richness, giving the sauce its smooth, silky body and flavour.
Cream or milk
Adds moisture and creaminess, thinning the sauce to a pourable consistency.
Lemon juice
Adds acidity that brightens the rich butter and balances the flavour.

The step that matters

Quickly stir in the egg mixture and do not let it boil.. Egg yolks thicken through gentle heat, but if the sauce gets too hot they scramble and curdle. Stirring the mixture in quickly and keeping the heat below boiling keeps the sauce smooth.
