Why it works: Beef and mushroom are a kitchen classic. They rank in the top 4% of all ingredient pairs, and cooks put them together in 3,232 recipes. Both carry 2,4-nonadienal, which smells fatty, green. The science ↓
Beef Suet
Ingredients
Directions
Render and clarify the beef suet by boiling it like bouillon.
Skim the fat and add slices of onions and pieces of bread.
Simmer for 4-5 hours, then remove the bread and onions.
Heat a sufficient quantity of the clarified fat in a frying pan.
Test the heat by sprinkling water; if it hisses, it's ready.
For frying fish, dip the tail in the fat; if it hardens, add the fish and turn it carefully.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
