Poached Eggs in Gravy

Ingredients

Directions

Poach the eggs

  1. In a stewpan, bring water, vinegar, and salt to a boil.

  2. Carefully break each egg into the boiling water, one at a time.

  3. Allow the eggs to cook without touching them until they begin to set.

  4. Remove the first egg that is done and place it in cold water.

  5. Continue until all eggs are cooked and cooled.

Finish and serve

  1. Peel the eggs and return them to warm water until ready to serve.

  2. Use a pierced spoon to remove the eggs and drain them on a cloth.

  3. Serve the eggs with veal stock sauce and sprinkle with mignonnette.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set protein forms the poached body and holds its shape in the water.
White vinegar
Acidity helps the egg whites coagulate faster and hold together in the water.
Bon blond de veau reduit (veal stock)
Reduced stock adds savory depth and gelatin-rich body to the sauce.

The step that matters

Let the eggs cook without touching them until they begin to set. Egg whites are fragile while liquid; moving them too early tears the whites apart, so they should be left alone until the proteins firm enough to hold their shape.
