What each ingredient does

Egg yolk
Beaten and brushed on the head so the bread crumb coating adheres and browns.
Bread crumbs
Form a crisp, browned coating on the outside of the head.
Flour
Thickens the butter gravy so it clings to the mince.
Butter
Adds richness and helps the coating brown in the Dutch oven.
Onion
Adds savoury flavour to the minced mixture.

The step that matters

Coat with bread crumbs and brown in a Dutch oven. The egg yolk must hold the crumb coating in place, and the butter needs enough heat to brown the crumbs. Without browning, the surface stays pale and soft instead of golden and crisp.
