Gooseberry Wine to Resemble Champagne

Ingredients

Directions

  1. Select gooseberries that are full grown but not ripe, preferably those with less flavor when ripe.

  2. Separate the smallest gooseberries using a sieve, discarding unsound or bruised fruit.

  3. Remove the remains of blossoms and fruit-stalks from the gooseberries.

  4. In a clean tub that holds 15 to 20 gallons, bruise the 40 pounds of gooseberries.

  5. Add cream of tartar to promote fermentation if necessary.
