How to Boil Fish

Ingredients

Directions

Prepare the poaching liquid

  1. Fill a kettle with enough cold water to cover the fish.

  2. Add the salt, sweet herbs, vinegar, and horseradish to the water.

  3. Bring the water to a boil, then reduce to a gentle boil.

Cook and serve the fish

  1. Cook a moderate-sized fish for about 30 minutes.

  2. Check if the fish is done by inserting a fish slice at the backbone; the flesh should lift off easily and appear white.

  3. Carefully remove the fish, unwinding any tape without breaking the skin.

  4. If cooking spawn or liver, place them alongside the fish in the kettle and cook longer if needed.

What each ingredient does

Vinegar
Adds acidity that brightens the flavour and helps keep the fish flesh firm.
Horseradish
Adds a sharp, pungent aroma that flavours the poaching liquid.

The step that matters

Checking doneness at the backbone. Fish keeps cooking from residual heat and turns dry and flaky when overcooked. Testing at the backbone shows whether the flesh has turned opaque and separates easily, so the fish can be lifted out before it overcooks.

Swap the horseradish

How well each one fits the dish's main ingredients (fish, vinegar):

  1. Cucumberfits better
  2. Mustardfits about as well
  3. Horseradishthe original
  4. Capsicumfits about as well

Fit is the average pairing score against fish, vinegar. Candidates are from the same food group and used in at least 100 recipes.
