Codlings, Small Haddocks, and Pollack

Ingredients

Directions

  1. Scale and wash the fish to remove all slime.

  2. Open the fish by the back close to the backbone and split down to the tail, leaving the belly intact.

  3. Remove the intestines and thoroughly clean the backbone.

  4. Flour the fish and dry them.

  5. Fry the fish in plenty of dripping until they are a fine pale brown, turning carefully to avoid breaking them.

  6. Drain off the fat and serve garnished.
