To Bake Fish in Fillets

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Remove the head, skin, split, and bone the fish.

  2. Roll the fish into fillets and coat them with flour.

  3. Spread butter or lard on the fillets, or wrap them in fat bacon.

  4. Bake the fillets in an oven at 350°F (175°C) or in a Dutch oven over the fire.

  5. Make a fish gravy from the head and bones, and pour it over the baked fish.

  6. Serve with plain melted butter.
