Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal neck
Gives the broth its body and rich meaty flavour as it simmers.
Mutton
Adds deeper meaty flavour to the broth during long simmering.
Potato flour
Thickens the broth to a light, smooth body when stirred into boiling soup.

The step that matters

Stirring the potato flour into the boiling soup. Potato flour must first be mixed smooth in cold liquid, otherwise it clumps. Stirring it into boiling soup lets the starch swell evenly and thicken the broth without lumps.
