Chicken Fillets with Oysters

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Remove the breast from the chicken and take off the skin.

  2. Flatten the meat with a rolling pin and trim each fillet.

  3. Cut each fillet in two and place a raw oyster in the center of each.

  4. Season lightly with pepper, salt, and lemon juice.

  5. Roll each fillet in a piece of buttered paper.

  6. Place them in a buttered sauté pan with a little stock.

  7. Cook in the oven at 400°F (200°C) for 10 to 15 minutes.

  8. Remove the paper, dish up, and pour over a nicely made white sauce.
