Directions

Prepare and cook

  1. Blanch the sweetbread and trim it.

Make the sauce and serve

  1. Heat the white sauce and stir in the egg yolk and lemon juice.

  2. Remove the sweetbread and place it in the sauce to heat through without boiling.

  3. Serve the sweetbread with the sauce poured over it, garnished with toasted or fried bread.

What each ingredient does

Sweetbread
Is the main protein; its delicate texture is the centrepiece of the dish.
Egg yolk
Enriches the sauce and thickens it gently as it heats, giving it a smooth, rich body.
White sauce
Provides moisture and a creamy coating that carries the flavour over the sweetbread.
Lemon juice
Adds acidity that brightens the rich sauce and balances its richness.

The step that matters

Heat the sauce with the egg yolk without boiling. Egg yolk thickens when warmed but curdles and turns grainy if it boils, so the sauce should be heated gently and kept below a simmer once the yolk is stirred in.
