Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the bulk of the croquette, giving a soft, starchy interior once mashed.
Butter
Adds fat and richness, softening the mashed potato texture.
Egg yolks
Bind the mashed potato so the shaped croquettes hold together.
Eggs
Form a sticky coating that helps bread crumbs adhere to the croquettes.
Bread crumbs
Create a crisp, golden-brown outer crust when fried.

The step that matters

Beat in the egg yolks while the potatoes are hot. Hot mashed potato absorbs the yolks evenly and binds smoothly. Once it cools, the mixture stiffens and blends less well, making the croquettes harder to shape and more likely to crack or fall apart.

Swap the white pepper

How well each one fits the dish's main ingredients (potato, butter, nutmeg, egg, flour, bread, parsley):

Fit is the average pairing score against potato, butter, nutmeg, egg, flour, bread, parsley. Candidates are from the same food group and used in at least 100 recipes.
