Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the dough

  1. Preheat the oven to 400°F (200°C).

  2. Beat the butter until creamy.

  3. Add the almond meal, bran, and salt, mixing well.

  4. In a separate bowl, beat the eggs and then add them to the mixture.

  5. Knead the dough on a floured surface using additional bran and almond meal to prevent sticking.

Shape and bake

  1. Roll out the dough and cut it into biscuits.

  2. Place the biscuits on a baking sheet and bake for 20 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Almond meal
Provides the main body of the dough, giving a crumbly, tender texture without gluten.
Eggs
Bind the dough together and add richness and structure as they set in the oven.
Butter
Adds fat for tenderness and flavour, and helps the dough hold its shape.
Prepared bran
Adds bulk and a slightly nutty, toasted flavour while absorbing some moisture from the dough.

The step that matters

Knead with extra bran and almond meal. Almond meal has no gluten to form a sticky network, but the dough can still stick to the surface. Dusting with extra bran and almond meal keeps it workable, so the biscuits keep their shape and do not tear when rolled.

Swap the almond

How well each one fits the dish's main ingredients (egg, butter):

  1. Pecansfits better
