Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Enriches the sauce with fat, adding richness and a smooth mouthfeel.
Flour
Thickens the liquid into a smooth, creamy sauce as it cooks in the roux.
Warm water or milk and water
Forms the liquid base that the roux thickens into a pourable sauce.

The step that matters

Cooking the roux gently without browning. Cooking flour and butter gently lets the starch swell and lose its raw taste while keeping the sauce pale and clean-flavoured. Browning changes the colour and flavour, and rushing can leave lumps if the liquid is added too quickly.

Swap the walnut

How well each one fits the dish's main ingredients (butter, flour, milk):

  1. Almondfits better
  2. Pistachiofits about as well
  3. Chestnutfits about as well
  4. Walnutthe original

Fit is the average pairing score against butter, flour, milk. Candidates are from the same food group and used in at least 100 recipes.
