On Boiling Fish

Ingredients

Directions

Prepare

  1. Rub the fish with vinegar or lemon juice.

  2. Place the fish on the drainer of a fish kettle.

  3. Cover the fish with boiling water.

Boil and test

  1. Add plenty of salt and 2 teaspoons of vinegar to the water.

  2. Boil for 3 to 5 minutes, then reduce heat to simmer.

  3. Skim off any scum that rises.

  4. Test the fish with a skewer; it's done when the flesh parts easily from the bone.

What each ingredient does

Whole fish
Forms the main body of the dish, cooked gently in the poaching liquid.
Vinegar
Adds a sharp acidity that brightens the mild flavour of the fish.

The step that matters

Keeping the water at a simmer after the initial boil. A hard boil keeps the water churning and can break the fish apart and toughen the flesh. Gentle simmering cooks the fish evenly while keeping it moist and intact.
