Duck Stuffing

Ingredients

Directions

  1. Blanch the onions in boiling water for 5 minutes to reduce their acrid flavor.

  2. Drain the onions and boil them in fresh water until tender.

  3. Scald the sage leaves in boiling water for 5 minutes, then dry them.

  4. Once the onions are tender, drain and mince them finely with the sage leaves.

  5. Mix in the bread crumbs, spiced pepper, and salt.

  6. Add the diced beef suet and bind the mixture with the eggs.
