Directions

Prepare

  1. Cut the beef into small squares.

  2. Wash, scald, and dry the giblets, then cut them into very small pieces.

Make the gravy

  1. In a stew pan, layer sliced onion and clarified beef dripping.

  2. Add the cut-up meat and giblets on top.

  3. Place the pan over low heat and fry until slightly colored.

  4. Pour in the water or broth and keep the heat low.

  5. Reduce gently until a light brown glaze forms, turning the meat occasionally.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Provides the meaty flavor that forms the base of the gravy.
Giblets
Add rich, concentrated meat flavor to the gravy.
Onion
Adds sweetness and aroma as it softens and browns in the fat.
Clarified beef dripping
Carries heat evenly and helps the meat and onion brown without burning.

The step that matters

Reduce gently until a light brown glaze forms. Keeping the heat low lets the meat proteins and sugars brown slowly, building color and flavor. High heat can scorch the bits stuck to the pan before the glaze develops.

Swap the onion

How well each one fits the dish's main ingredients (beef, coffee):

  1. Potatofits better
  2. Tomatofits about as well
  3. Onionthe original
  4. Capsicumfits about as well

Fit is the average pairing score against beef, coffee. Candidates are from the same food group and used in at least 100 recipes.
