What each ingredient does

Puff pastry
Its layered dough puffs and crisps as it bakes, giving the straws a light, flaky texture.
Parmesan or gruyere cheese
Melts and browns in the oven, adding savoury flavour and golden colour to the straws.

The step that matters

Baking until golden. Puff pastry can go from pale to burnt quickly. Watching for an even golden colour ensures the layers are fully cooked and crisp, and the cheese is browned without scorching.
