Quail Pie

Ingredients

Directions

Prepare the birds

  1. Prepare the quails for roasting, placing 2 teaspoons of foie gras in each.

Make the broth

  1. Make a strong broth using the calf's foot or sheep's feet and giblets.

  2. Cool the broth and remove any grease, then flavor with Marsala, mushroom ketchup, and red currant jelly.

Assemble and bake

  1. Rub the pie dish with a shallot and layer the bottom with pieces of tender beef and strips of bacon, dusting with spiced pepper between layers.

  2. Place the quails on top of the beef, adding bits of foie gras, bacon, ham, tongue, or Bologna sausage between each bird.

  3. Cover with slices of bacon, moisten with gravy, and reserve some for later.

  4. Cover with light pastry and bake.

What each ingredient does

Quails
Form the main body of the pie, staying tender and juicy under the pastry.
Foie gras
Adds richness and a buttery, melting texture to the birds.
Beef fillet steak
Provides tender meat that becomes savory and succulent as it bakes beneath the birds.
Calf's foot or sheep's feet
Yields a strong broth rich in gelatin, which gives body and moisture to the filling.
Bacon
Contributes savory fat that bastes the meat and adds salty, smoky flavor.
Red currant jelly
Adds sweetness and acidity that balance the rich meats and broth.

The step that matters

Cover with light pastry and bake. The filling must be well moistened with broth before the pastry seals it, because the pie bakes in a closed crust. Gelatin from the broth sets as the filling cools, so a dry filling yields a dry pie.

Swap the red currant

How well each one fits the dish's main ingredients (quail, chicken, beef, wine, mushroom, ketchup, pepper):

  2. Grapefits better

Fit is the average pairing score against quail, chicken, beef, wine, mushroom, ketchup, pepper. Candidates are from the same food group and used in at least 100 recipes.
