Making the Curry

Ingredients

Directions

Prepare

  1. Melt the butter or clarified beef suet in a sauté pan.

  2. Add the chopped shallot and fry for a couple of minutes.

  3. Add the chicken pieces and lightly fry them until slightly colored.

  4. Transfer the chicken to a stew pan and let it marinate in the curry sauce for at least 30 minutes.

Simmer

  1. Place the stew pan over medium heat and add broth or water if the liquid is insufficient to cover the chicken.

  2. Stir until boiling, then reduce the heat and simmer gently for 25 minutes, leaving the stew pan slightly open.

  3. Add half of the coconut milk, grated ginger, and sweet acid during simmering.

  4. Taste the curry sauce and adjust the acidity or sweetness as needed.

Finish

  1. After 25 minutes, stir in the remaining coconut milk and cook for an additional 3 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main protein, which becomes tender as it simmers in the sauce.
Coconut milk
Adds richness and moisture, giving the curry sauce a creamy body.
Shallot
Softens and sweetens as it fries, building a mild aromatic base.
Butter or clarified beef suet
Carries the frying of the shallot and chicken and adds fat for flavor.
Grated green ginger
Contributes a sharp, aromatic warmth to the sauce.

The step that matters

Simmering after adding coconut milk. Coconut milk can separate or turn grainy if it boils hard for long. Keeping the simmer gentle and adding the remaining milk near the end helps the sauce stay smooth and creamy.
