What each ingredient does

Onion
Browning in butter or dripping builds a savoury, sweet base for the curry.
Curry powder
Supplies the spice aroma and flavour that define the dish.
Green apples
Break down during simmering to add body and a mild sweet-tart fruitiness.
Vinegar or lemon juice
Adds acidity that brightens the sauce and balances the sweetness.
Sugar
Balances the sharpness of the acid and spice for a rounded flavour.
Cold cooked meat
Gently simmering it in the sauce lets it absorb the curry flavours.

The step that matters

Simmering the meat for at least 1 hour. Cooked meat is already done, so the long gentle simmer is for flavour absorption, not cooking. Keeping the liquid at a gentle simmer rather than a hard boil helps the meat stay tender and the sauce from reducing too fast or scorching.
