What each ingredient does

Onion
Browning in fat builds a sweet, savoury base for the sauce.
Apples
Their natural sweetness and tartness soften into the sauce and balance the curry powder.
Curry powder
Provides the spiced aroma and colour that define the dish.
Vinegar or lemon juice
Adds acidity that brightens the sauce and balances the sweetness.
Cold cooked meat
Supplies the protein; simmering in the sauce lets it absorb the flavours.

The step that matters

Simmering the meat for at least 1 hour. Cooked meat only becomes tender and well flavoured through slow, gentle simmering. Rushing this step leaves the meat tough and the sauce thin and underseasoned, because the flavours need time to penetrate and blend.

Swap the onion
