Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the main body of the loaf and provides most of its meaty texture.
Bread crumbs
Absorb moisture and help the loaf hold together with a tender texture.
Pork
Adds fat, which keeps the loaf moist and adds flavour.
Raw eggs
Bind the mixture and set when cooked, giving the loaf its firm structure.

The step that matters

Steam until fully set before drying. Steaming cooks the egg-bound mixture through gently. Rushing it or skipping the full steaming time can leave the centre loose and crumbly when sliced.

Swap the clove

How well each one fits the dish's main ingredients (veal, bread, pork, pepper, egg):

  1. Sagefits better
  2. Parsleyfits better
  3. Marjoramfits better
  4. Clovethe original

Fit is the average pairing score against veal, bread, pork, pepper, egg. Candidates are from the same food group and used in at least 100 recipes.
