What each ingredient does

Flour
Provides the starch and gluten-forming proteins that give the bread its structure and crumb.
Yeast
Ferments sugars in the dough, releasing gas that makes the loaves rise.

The step that matters

Boiling the flour in water until smooth. Heating flour in water gelatinizes its starch, which thickens the mixture and helps the bread hold moisture. Stirring keeps it from lumping or scorching on the bottom of the pot.
