What each ingredient does

Milk
Provides the proteins that set into the curd, forming the body of the cheese.
Rennet
An enzyme that coagulates the milk into a firm curd.
Young red sage
Adds aromatic flavor and color to the cheese.
Spinach leaves
Adds green color and a mild vegetal flavor to the curd.

The step that matters

Break the curd gently. Rough breaking shatters the curd into small fragments that release moisture and whey too quickly, leaving a drier, crumblier cheese. Gentle handling keeps the curd pieces intact so the cheese stays moister and smoother.

Swap the sage

How well each one fits the dish's main ingredients (spinach, milk):

  1. Nutmegfits better
  2. Cinnamonfits better
  3. Cuminfits better
  4. Sagethe original

Fit is the average pairing score against spinach, milk. Candidates are from the same food group and used in at least 100 recipes.
