What each ingredient does

Fresh-ground coffee
Provides the main coffee flavor and aroma that the brew extracts into the water.
Isinglass chips
Acts as a fining agent that binds fine grounds so the coffee settles clear.

The step that matters

Pouring out a cupful and returning it to the pot. Pouring the liquid back over the grounds repeats the extraction and helps settle fine particles, so the brew tastes fuller and clears better before the fining step.
