Veal and Parsley Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Cut slices from the leg or neck of veal and season with coarse sea salt.

  3. Scald the parsley, squeeze it dry, and chop it slightly.

  4. Layer the chopped parsley at the bottom of a dish.

  5. Add the seasoned meat in layers on top of the parsley.

  6. Pour in new milk, ensuring it does not touch the crust.

  7. Cover the dish and bake until done.

  8. After baking, pour out a little milk and add ½ pint of scalded cream.
