To Preserve Greengages
Ingredients
Directions
Choose the largest greengages that are beginning to soften.
Split them without peeling and sprinkle with part of the measured sugar.
Blanch the kernels with a small sharp knife.
The next day, pour the syrup from the fruit into a pot and boil it gently with the remaining sugar for 6 to 8 minutes.
Skim the syrup and add the plums and kernels.
Simmer until clear, removing any scum that rises.
Place the fruit into small pots and pour the syrup and kernels over them.
