Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lean beef
Provides the meat that becomes tender during stewing and flavours the gravy.
Onions
Add sweetness and savoury depth as they soften and brown in the pan.
Butter
Carries heat for browning and adds richness to the gravy.
Flour (in the method)
Coats the beef so it browns well and helps thicken the gravy.

The step that matters

Browning the meat gently. Frying over gentle heat browns the meat and onions slowly, building colour and flavour through the Maillard reaction. Too much heat burns the flour and sugars, leaving a bitter taste.

Swap the allspice

How well each one fits the dish's main ingredients (beef, onion, butter, pepper):

  1. Garlicfits better
  2. Parsleyfits better
  3. Thymefits better
  4. Allspicethe original

Fit is the average pairing score against beef, onion, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
