Why it works: Thyme and marjoram match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 2,225 recipes. Both carry terpineol, which smells pine, woody. The science ↓
Roast Veal
Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Preheat your oven to 350°F (175°C).
Keep the veal at a distance from the fire at first.
Baste the shoulder well until nearly done.
Dredge with flour and baste with a little butter.
Stuff the fillet with thyme, marjoram, parsley, savoury, lemon-peel, mace, pepper, nutmeg, and bread crumbs mixed with eggs and suet.
Lay the stuffing in the udder and any remaining in holes in the meat.
Serve with melted butter and garnish with sliced lemon-peel.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
