To Preserve Green Gages
Ingredients
Directions
Prick the green gages all over with a small fork and soak them in cold water.
Scald the gages in a pot of water until soft, ensuring the water does not boil.
Let the gages sit in the scalding water for three days.
Drain the gages and place them in a preserving pan, covering them with hot clarified sugar.
Gently boil the gages for a short time and let them sit for two days.
Drain the syrup, boil it until it thickens, and add more clarified sugar if necessary.
Gently boil the gages again and let them sit for two days.
Drain the syrup, place the gages in jars, and pour the hot syrup over them.
